Rich and buttery Cornmeal Quick Bread

Add your favorite ingredients to make this the perfect Corn Bread for your meal

Makes 6-10 servings

¼ c unsalted butter, melted
1 egg
½ c buttermilk
½ c sugar
1 tsp salt
½ tsp baking soda
¼ tsp baking powder
½ c all purpose flour
½ c corn meal

Note: Possible additions:
Fresh or frozen/thawed/drained corn
Diced roasted jalapenos or poblanos or even sweet red bells
Chopped cilantro or any herb
For a sweeter bread, brush honey on the top once baked

Pre-heat oven to 350 degrees

Prepare baking dish or molds with some softened butter or non-stick spray

Combine all wet ingredients in a small bowl
Combine all dry ingredients in a mixing bowl
Add wet to dry and combine well
Pour into baking dish (9x9 pyrex) or molds
Baking time will depending on baking dish or molds, pyrex dish will take approximately 25 minutes. Bake until toothpick comes out almost clean.
